Turkey is ultimately the best leftover buy in town. I love turkey round two almost as much as I love the first go at it Christmas dinner.
I buy a large turkey for the leftovers. Depending on the size of the big bird I have dinner fixin's for up to 3 days - longer if I make a soup using the bones.
If the idea of eating turkey for days in a row doesn't appeal to you go ahead and freeze cooked leftovers and have an impromptu turkey dinner in January.
Here's my family's favourite leftover recipe.
Tex Mex Turkey Skillet Dinner
From: Ultimate Foods for Ultimate Health and don't forget the chocolate!

Makes - 6 cups (1.5L)
Serves - 4 - 1 1/2 cups (375 mL) serving
Kid Friendly
1 Tbsp. (15 mL) canola oil
1 medium onion, diced
2 cups (500 mL) frozen whole kernel corn, thawed - rinse frozen corn under cool water
2 cups (500 mL) chopped cooked leftover turkey
1 cup (250 mL) salsa, mild, medium or hot - try the deli brands they have less sodium
8 cups (2 L) baby spinach
Heat a large frying pan or skillet over medium heat; add oil and onion and sauté for 2 minutes or until the onion is soft.
Add corn, turkey, salsa and heat till bubbling, approx. 5 minutes.
Add spinach and stir until it has wilted. Serve. Tastes great over rice or just plain.
