Wild Rice with Canadian Brie, Blue Cheese and Peas

1. Ingredients

  1. 1 1/2 cups (375 ml) wild rice
  2. 3 cups (750 ml) water
  3. Salt
  4. 1 lb (500 g) fresh peas, shelled or equivalent amount of frozen, drained
  5. 1 garlic clove
  6. 3 1/2 oz (105 g) Canadian Brie, rind removed, cubed
  7. 3 1/2 oz (105 g) Canadian blue Ermite cheese, crumbled
  8. Salt and Pepper
  9. 1/2 cup (125 ml) walnut oil or olive oil

2. Cooking Directions

  1. Put rice in pot, add water and salt, bring to a boil over medium heat. Cover, cook over medium low heat for 50 minutes without disturbing.
  2. Take off the heat and drain if not all of the liquid has been absorbed. Half cover the pot with lid and let cool 30 minutes.
  3. Bring medium pot of water to a boil, add peas and cook until they rise to the top, about 30 to 45 seconds.
  4. Take off heat and cool under cold running water. Drain. Dry on paper towels and add to rice.
  5. To dress salad: add garlic, cheeses, salt and pepper to taste to rice and peas. Add oil and toss well.

Yield: 6 as side dish servings

    Sides I am making are: •Creamy corn casserole •Cheesy vegetable casserole •Homemade mac and cheese •Loaded mashed potatoes Thank you:) The vegetable casserole has a few different colors when mixed- Green, orange, and white. The loaded mashed potatoes has large pieces of bacon and scallions on top. But I see what you mean.
