Savoury Cheesecake

1. Ingredients

  1. 3/4 cup (175 mL) toasted breadcrumbs
  2. 3/4 cup (175 mL) toasted walnuts, chopped
  3. 3 tbs (45 mL) unsalted butter, melted
  4. 3/4 lb (350 g) Canadian Cantonnier or Oka or Saint-Paulin or Noyan cheese, grated
  5. 1 1/4 lb (625 g) Canadian Cream Cheese
  6. 4 eggs
  7. 1 garlic clove, crushed (optional)
  8. 1 tsp (5 mL) fresh tarragon, minced or 1/4 tsp (1 mL) dried tarragon
  9. Pinch of salt and pepper

2. Cooking Directions

  1. Preheat oven to 350 °F (180 °C).
  2. Combine crumbs, nuts and melted butter in food processor; mix well. Press mixture into sides and bottom of an 8-inch (20 cm) spring form pan. Set aside.
  3. Beat grated Canadian Cantonnier and Canadian Cream Cheese together with electric mixer. Add eggs, one at a time. Beat well after adding each egg. Add garlic, tarragon salt and pepper. Mix together.
  4. Pour mixture into the crust and bake for 45 minutes, or until cheesecake is firm in the middle. Let stand 30 minutes before serving.

Yield: 6 servings
