Potatoes Stuffed with Pork, Ricotta and Tomato Sauce

1. Ingredients

  1. 8 medium-sized potatoes with skin
  2. 3 garlic cloves, finely chopped
  3. 5 green onion, finely chopped
  4. 1 tbsp (15 mL) olive oil
  5. 1 tbsp (15 mL) butter
  6. 1 lb (500 g) ground pork
  7. 1 1/3 cup (325 mL) Canadian Ricotta cheese
  8. 1 tsp (5 mL) savory
  9. 1 tbsp (15 mL) Worcestershire sauce
  10. Oregano
  11. Salt and pepper
  12. 3 cups (750 mL) tomato sauce

2. Cooking Directions

  1. Preheat oven to 350°F (180°C).
  2. Scrub potatoes. In saucepan of boiling water, cook potatoes for 10 minutes until half-cooked. Drain and rinse under cold water. Slice off top of each potato. Gently scoop out potatoes with small knife or melon ball scoop and avoid piercing skin. Reserve potato flesh for later use. Set aside potato shells.
  3. In saucepan, sauté garlic and green onions in oil and butter for 2 minutes while stirring. Add ground pork and continue cooking until browned. Drain off fat. Place mixture in bowl. Stir in Canadian Ricotta cheese and remaining ingredients, except tomato sauce. Generously season with oregano, salt and pepper. Mix well.
  4. Stuff potato shells with pork and cheese mixture. Place potatoes in buttered baking pan and bake for 30 minutes. Remove from oven and serve stuffed potato with tomato sauce. Serve with green salad.

Yield: 4 servings

    One day i invited my friend Amy to my house over dinner and she was so suprised to see my mom making home-made pasta and breads from flours. Amy thought pasta and breads are something we buy at grocery stores. I also got invited to amy's house on her b-day and was so surprised to see her mom cooking foie gras.     Can someone please tell me why my pie crust is crumbling when i try to pick it up? I bought the jiffy pie crust you mix yourself and i made it a few days ago and had no problem! now i am trying to make them tonight and when ever i try to pick it up it falls apart.t could it have anything to do with it being hot and humid in the house or maybe not enough water even tho i put the same amount in as before?
