Poseidon Fresh Oysters au Gratin

1. Ingredients

  1. 24 fresh oysters, scrubbed
  2. Chili sauce
  3. Tabasco sauce
  4. Lemon juice
  5. 1/3 cup (75 ml) bread crumbs
  6. 1/3 cup (75 ml) grated Canadian Parmesan cheese
  7. Fresh parsley, chopped
  8. Freshly ground pepper

2. Cooking Directions

  1. Preheat oven to 350°F (180°C).
  2. Open oysters with knife and remove top shell. Season oysters on the half shells to taste with chili sauce, Tabasco sauce and lemon juice. Top with bread crumbs and Canadian Parmesan cheese.
  3. Place oysters gently in large baking pan (to keep oysters from tipping over, line baking pan with rock salt).  Bake in oven for 10 minutes, or golden. Serve 6 oysters per guest. Garnish with fresh parsley and sprinkle with freshly ground pepper. Serve immediately.

Yield: 4 servings
