Oka Cheese and Clementine Sunny Salad

1. Ingredients

  1. 1 romaine lettuce, rinsed, patted dry and torn in pieces
  2. 1 Boston lettuce, rinsed, patted dry and torn in pieces
  3. 2 Belgium endives, rinsed, patted dry and torn in pieces
  4. 1 or 2 clementine(s), peeled and cut in segments
  5. 1 cup (250 ml) diced Canadian Oka cheese
  6. 1/4 cup (50 ml) pine nuts Raspberry Dressing: 1 cup (250 ml) frozen or fresh raspberries
  7. 1/3 cup (75 ml) white vinegar
  8. 2/3 cup (150 ml) olive oil
  9. 1/2 cup (125 ml) brown sugar
  10. 2 garlic cloves, finely chopped
  11. Salt and pepper
  12. Tarragon
  13. Fresh basil

2. Cooking Directions

  1. In large salad bowl, mix together all ingredients, including Canadian Oka cheese. Before serving, drizzle with Raspberry Dressing and toss. Garnish with fresh tarragon sprigs.
  2. Raspberry Dressing:
  3. In small saucepan, simmer raspberries and vinegar for about 15 minutes, stirring occasionally. Remove from heat. Add oil, brown sugar and garlic. Season to taste with salt and pepper, tarragon and basil. Purée in food processor. Strain mixture and chill for 2 hours.

Yield: 8 servings
