1. Ingredients

  1. 1/4 lb (125 g) butter
  2. 1/4 lb (125 g) Canadian Oka, in small cubes
  3. 1/4 lb (125 g) Canadian Ermite, in small cubes
  4. 1/4 lb (125 g) Canadian Fontina, in small cubes
  5. 1/2 cup (125 ml) Canadian Parmesan, grated
  6. 1 cup (250 ml) 35% cream
  7. Ground white pepper
  8. 1 lb (450 g) linguini, cooked al dente, drained

2. Cooking Directions

  1. In a large pot, melt butter over a low heat. Add the three cheeses. Stir until melted.
  2. Stir in Canadian Parmesan and cream. Blend well. Grind lots of pepper into the hot cheese sauce. Toss pasta with sauce. Serve immediately.

Yield: 6 as a starter or 4 as main course servings
