Cucumber and Bacon Canapés

1. Ingredients

  1. 2 English cucumber
  2. 2/3 cup (150 mL) chopped cooked bacon
  3. 1 Green bell pepper, trimmed and chopped Cottage Cheese Dip: 2 cups (500 mL) Canadian Cottage cheese
  4. 3 green onions, sliced
  5. 1 canned jalapeno pepper, chopped
  6. 1 tbsp (15 mL) Dijon mustard
  7. Juice of 1 lemon
  8. Salt and pepper

2. Cooking Directions

  1. Rinse cucumbers well and cut into thin slices with peel.  Spread each slice with Cottage cheese dip. Sprinkle with bacon bits and chopped green bell pepper. Arrange canapés on serving platter and serve immediately.
  2. Cottage Cheese Dip:
  3. Strain Canadian Cottage cheese to remove maximum liquid. Discard liquid. In bowl, combine all ingredients. Mix well and season to taste with salt and pepper. Refrigerate.

Yield: 50 to 60 canapés servings
