Creamy Smoked Salmon and Fennel Canapés

1. Ingredients

  1. 1/3 cup (75 mL) Canadian Cream cheese
  2. 1/3 lb (150 g) smoked salmon, chopped
  3. 1/2 cup (125 mL) sour cream
  4. 2 tbsp (30 mL) chopped fresh fennel
  5. Juice of one half lemon
  6. Pepper
  7. 25-30 crackers or small rusks
  8. Capers

2. Cooking Directions

  1. In bowl, mix Canadian Cream cheese with salmon, sour cream, fennel and lemon juice. Season to taste with pepper. Spread each cracker with smoked salmon mixture. Garnish each canapé with one caper and arrange on serving dish. Serve immediately or refrigerate.

Yield: 25 to 30 canapés servings
