Cheesy Mini Pizzas with Anchovy Butter

1. Ingredients

  1. 30 pita quarters, mini pitas (or 8 slices of lightly toasted bread, cut in 4)
  2. 2 tomatoes, chopped
  3. 1 green bell pepper, chopped
  4. 1 onion, chopped
  5. 10 pitted black olives, chopped
  6. 2 cups (500 mL) grated Canadian Mozzarella cheese Anchovy Butter: 1/2 cup (125 mL) softened butter (preferably unsalted)
  7. 2 tbsp (30 mL) finely chopped anchovies
  8. Juice of 1 lemon
  9. Pepper
  10. Dried thyme

2. Cooking Directions

  1. Preheat oven to 400 °F (200 °C).
  2. Spread pita quarters, or bread, with Anchovy Butter. Sprinkle with chopped tomatoes, bell pepper, onion and olives. Top with Canadian Mozzarella cheese and place in baking sheet. Bake for 8 to 10 minutes, or until cheese is golden. Remove from oven and serve.
  3. Anchovy Butter:
  4. In bowl, whip all ingredients together, until smooth. Season to taste with pepper and thyme. Mix well. Refrigerate.

Yield: 30 pizzas servings
