1. Ingredients

  1. 4 bagels, halved
  2. 2 tbsp (30 mL) butter
  3. 8 eggs
  4. 1/2 tsp (2 mL) each salt and pepper
  5. 1/2 cup (125 mL) shredded Canadian Cheddar cheese

2. Cooking Directions

  1. Butter cut sides of bagels, trimming holes to 1 inch (2.5 cm) in diameter, if needed. Working in batches, place bagels, buttered-side down in heavy skillet over medium-high heat. Cook for about 2 minutes or until golden on bottom.
  2. Transfer bagels, cut-side-down, to rimmed baking sheet; reserve until all bagels are browned. Break an egg into centre of each bagel half and sprinkle with equal amounts of salt and pepper. Sprinkle Canadian Cheddar over eggs.
  3. Bake in 400 ºF (200 ºC) oven for 8 to 10 minutes or until eggs are set but yolks are still soft.

Yield: 4 servings
