Au Gratin Eggs on Bagels

1. Ingredients

  1. 6 hard-boiled eggs, chopped
  2. 1/2 cup (125 mL) cooked ham, in small dice
  3. 1/3 cup (80 mL) mayonnaise
  4. 1 tbsp (15 mL) green onion, minced
  5. Salt and pepper to taste
  6. 4 bagels or English muffins
  7. 1/2 cup (125 mL) Canadian Monterey Jack cheese, grated

2. Cooking Directions

  1. Mix eggs, ham, mayonnaise and onion. Season with salt and pepper.
  2. Slice bagels or muffins in two and toast them. Spread egg salad on bagel halves and top with Canadian Monterey Jack cheese. Place in oven preheated to 400 °F (200 °C) until cheese bubbles.

Yield: 4 servings
