As always, there are bound to be leftovers from this year’s Thanksgiving feast; but all it takes to finish off the remainders is some culinary ingenuity. Here are 10 yummy suggestions for what to do with your Thanksgiving leftovers.
 
1. Turkey salad. Make a salad using a mix of baby spinach, endive, arugula and other leafy vegetables. Also add cherry tomatoes and red onion. Toss with olive oil and balsamic vinegar and throw in leftover turkey pieces for a tasty and satisfying lunchtime meal.
 
2. Turkey quesadillas. Place slices of reheated turkey and grated cheddar cheese on top of a tortilla and cover with another tortilla. Heat the quesadilla in a non-stick skillet until the cheese melts. Serve with cranberry sauce on the side for dipping.
 
3. Turkey sandwiches. Sandwiches are a great way to use leftover turkey and there are so many different types to make. For example, chop up some turkey into chunks and mix it with mayonnaise and celery to make a turkey salad sandwich filling. You can also make a wrap with grilled vegetables and turkey pieces. The possibilities are endless!
 
4. Turkey stew or soup. Make a hearty stew or soup using leftover turkey meat. This is also a great way to finish off any leftover vegetables.

5. Shepherd’s Pie. Use leftover mashed potatoes to make Shepherd’s Pie.
 
6. Potato patties. Just add a beaten egg to cold, leftover mashed potatoes. Next, shape the mixture into patties and sprinkle both sides with breadcrumbs. Add olive oil to a frying pan and fry the patties over high heat until both sides are crispy and golden brown.
 
7. Cranberry jam spread. Use leftover cranberry sauce as a spread on scones or bran muffins.
 
8. Turkey casserole. Bake a delicious Turkey Broccoli Casserole for a quick and nutritious weeknight dinner.
 
9. Turkey pasta. Cut turkey pieces into cubes and combine with a marinara sauce and cooked penne or fusilli to make a yummy turkey pasta dish.
 
10. Turkey stir-fry. To make a turkey stir-fry dish, add one tablespoon of oil to a non-stick frying pan over medium high heat. Then stir-fry snow peas, sliced carrots, chopped onions and minced garlic together. Add sliced turkey pieces to the mixture and continue to stir-fry until turkey is heated. Add two tablespoons of soy sauce and stir so mixture is evenly coated. Serve over steamed jasmine rice.

    Unfortunately people like Peace tend to turn people away from some valid ideas due to being rather extremist. I think that the idea that everyone turn to veganism is very unrealistic. However I do agree that the amount of livestock being raised (and the forests, etc. cleared to grow the feed for the animals) has a huge impact on the planet. If everyone had one meatless meal a week it would have a huge impact without being too much of a challenge. I love vegetables and am not a huge meat lover, but Thanksgiving is not the time to try to get people to go vegan- myself included. Sorry Peace, but I doubt that many people have Tofurky and Cauliflower gravy on their Thanksgiving menu, and can you really blame them? If you care about your cause then maybe you could get people to listen by being reasonable rather than turning them off with an extreme rant....

    Peace – I don’t even know why I am discussing this with you – or answering to your post. If you really believe in God and her/him creating universe, earth, all living things – you must believe in this – God according to you created all creatures, carnivorous creatures and vegetarian creatures and – Oh my God what about all the birds – they are carnivorous eating all the worms – there is no end of it – your head must be spinning – and again – why do I even wasting my time to respond to your post – there are smart people and not so smart.

    Crystal: Then don't read my posts! Simple solution, as you say.. Oh and Peace: It must be very hard on your feet to wear shoes that are not made of sturdy leather! That is under the assumption that all of your clothes do not contain any kind of animal bi-product of course... Turkey a la King is the best leftover BTW.. In fact its ready right now!

    I use leftover turkey as the meat part on a plate of tortilla chips. Just use salsa, your fave vegies and bits of turkey. Sprinkle chees on top, heat to melt cheese and voila! BTW Peace, what else are turkeys for? Pets? Well in parts of the world dogs are a delicacy. (Not mine, that's for sure!) If you do not support the meat eating part of the world, good for you! As for me, meat with every meal, please and thank you! (And yes, I LOVE Kentucky Fried Chicken too!)

    Peace. you sound like an idiot! For one: We "humans" were created equal, NOT humans to animals. Us humans were created in God's image, not animal's. (VERY big difference.) For two: It was God's commandant to man to eat meat after the flood. (Look it up.) For Three: The disasters, and plagues of the world isn't a result of livestock raising, man has been raising livestock for years, but rather a lack of love towards one another and an increase in pride, selfishness, and rejection of God. (A huge difference.) For Four: Being vegan isn't the answer. So find something better to do with your life. Have a good day.
