The kids are fancy free for the summer and with those fresh-air appetites, here is a nifty vegetarian sandwich to serve for a nutritious outdoor lunch.
Open-Faced Apple Tahini Sandwich
1 small apple (any variety, peeled or unpeeled)
5 ml (1 tsp) peanut, cashew or almond butter
2 slices whole-wheat, whole-grain or multi-grain bread
15 ml (1 tbsp) tahini
15 ml (1 tbsp) honey or maple syrup, to taste
1 ml ( 1/4 tsp) cinnamon
Core and cut apple into slices about 3 mm (1/8 inch) thick. Spread your choice of nut butter on each slice of bread. Lay apple slices on bread. Drizzle tahini over apple slices; then drizzle with honey. Sprinkle cinnamon on top.
Place slices into a toaster oven and toast on high. You may need to toast twice - watch bread to prevent burning.
Makes 2 servings.
