Well, I'm trying to make latija. It's a guamanian recipe, and it involves making this custard. Point is, I'm having trouble making it. I've had two fail attempts, the first one over spilling from the pot, the second one, the egg had curd. So both tries I threw out, and I have only limited supplies left to make one more. One question, how can I make the custard, and make sure that my eggs don't curd or scramble while making it? That's the one part I have trouble with.

Before I spend a lot of $ on an aebleskiver pan, I'd like to try the recipe first. Is there anything that I can substitute for the pan? I have a cast iron frying pan. I was thinking of using a muffin pan in the oven but don't know if it will be hot enough.
