The simple way to make a summery fruit cake
By Katrina Walsh
What you'll need
• One box of vanilla cake mix
• 2 cups (500 mL) whipped cream, or 4 cups (1L) Cool Whip whipped topping, thawed
• 1 lb (454 g) container strawberries, cut into 1/2-inch thick slices
• 2 medium-sized mangoes, cut into 1/2-inch thick slices
1. Bake your cake in a round pan according to the package directions. Then let it cool completely.
2. Once the cake has cooled, cut it in half horizontally using a long serrated knife to create a top and a bottom.
3. Then spread a thick layer of Cool Whip or whipped cream over the bottom half of the cake.
4. Then place mango slices around the outer edge of the cake.
5. Continue until the surface of the whipped cream is covered.
6. Then start laying your strawberry slices overtop.
7. Continue until the mangos are covered in a layer of strawberry slices.
8. Then reattach the top of the cake.
9. Cover the cake top in a thick layer of whipped cream.
10. Then spread around another layer of mangos.
11. And another layer of strawberries.
12. Spread one more layer of whipped cream atop the fruit to hold it in place.
13. Decorate the top of the cake with a few more mango slices and a strawberry sliced into a fan. Then you're done!
